Pecos Pit, Seattle

Unapologetically shabby,
offering nothing more than picnic tables and smiles for its decor,
this SoDo institution knows it doesn't need Scandinavian wood
finishes and Chihuly artworks to pull in the customers like so many
of its neighbors a couple of minutes to the north. Pecos Pit serves
only one type of food: Meat. In a bun. Dripping with barbecue sauce.
Well, and some good old Southern trimmings, but it's mostly about
the flesh.
Needless to say, this is no territory for vegetarians. Dock
workers, SoDo laborers, Safeco Field attendees and weak-willed
passers. All gather in the unremarkable outdoor eating area to coat
themselves up to the wrists in cook Ron Wise's special sauce --
available in three degrees of heat -- as they inhale a hefty beef
brisket or Pecos beef sandwich.
Ask for your sandwich to be "spiked" and you'll get a spicy link
wedged in there for a little extra zing.
